Frozen Cake gone bad

At Christmas, I had way too much eggnog triffle components to fit in my triffle bowl. I froze :

a) sponge cake brushed w/ sugar syrup/grand marnier/rum
in a freezer zip lock

b) mascarpone/sabayon/whipped cream/gm/rum goo in a tupperware bowl

Monday night - scraped off top 1/3 of goo...it had a little frosty-ness on top, but was frozen pretty hard, not so hard that I couldn't chisel some off off the top. Nuked it 10 seconds, then whipped. It was delicious. Cake was not frozen solid, but since it was sponge cake, I did not consider this too odd.

Shortly after dinner, stomach started to feel unpleasant. I attributed this to large quantity of garlic I consumed w/ my 40 clove of garlic chicken. Thought nothing else of it.

Ate some more cake last night, same immediate crampy symptoms. Say to husband " I think the cake has gone bad"...his stomach felt bad too.

So, what went wrong? I thought cake would last longer than 3 months in the freezer. Was it the cake? the goo? Sure was a lot of sugar and booze for something to go bad.

There was nothing else in the freezer besides these two items. Could that be the problem?
