DonShirer | Oct 28, 201810:23 AM

Fromage d'Affinois, the double(triple?) creme French variation on Brie using ultrafiltration techniques, had already found its way into supermarket cheese counters, at 2/3 the price in cheese specialty shops. Somewhat reminiscent of Cambozola but sweeter, it is eminently spreadable, not crumbly. Now I have to discover what cracker pairs best with it!
