Fromager d'Affinois Bleu

      Fromage d'Affinois, the double(triple?) creme French variation on Brie using ultrafiltration techniques, had already found its way into supermarket cheese counters, at 2/3 the price in cheese specialty shops. Now it has been joined by F.d'A. Bleu, a soft, creamy snack that has pushed its way onto my A-list of tangy blues. Somewhat reminiscent of Cambozola but sweeter, it is eminently spreadable, not crumbly. Now I have to discover what cracker pairs best with it!
