Hi! First post. I have been reading these posts for the last month and very much appreciate the wealth of information. My husband and I are visiting Paris/Beaune mid May. It is my first time visiting France (his 3rd). We are staying in the 6th. We love food/wine/cocktails/cooking and dining out. I have set my dinner and lunch reservations (except Septime as we're not quite at three weeks) and I'm confident about my choices. Okay, I'll freak out in a few days and post the restaurants so that you folks don't think I'm missing something amazing...

We want to explore French cheeses and would like to have a cheese tasting. I have researched wine/cheese tastings and have found two: Paroles de Fromage and OChateau. I like the idea of an intimate setting and an English speaking guide. These tastings are not cheap and I'm wondering if we should just stop in at a few fromageries and taste that way. Our French is not good and I'm worried that we wouldn't be able to communicate our likes and dislikes with the owner/employees. Thoughts? Recommendations? Merci.
