Do any restaurants serve this in Seattle, and if not, why? I've had it in Canada and the UK and hear it's popular in other European countries as well. It's so delicious, I can't believe a seafood-y town like Seattle doesn't do it regularly. I did have it once in the early days of Steelhead Diner--it was complimentary from the chef; the waitstaff said they were "trying it out". The smelt were tiny and tender, lightly fried and salted--I couldn't get enough of them! But I never saw it on that or any other Seattle menu since. :-(
