Fried Rice

I grew up in St. Louis, where fried rice was dark. Could not have been just from soy sauce. Never heard of fried rice with carrots and peas, till I traveled out of the city. Still ask for my fried rice without carrots and peas. St. Louis had scores of walk up Chinese places. I have been told that the style was like New York Chinese. Any suggestions for the Western side of LA?
