fried rice help

I'm trying to recreate our favorite Thai restaurant's chicken fried rice for my kids. I know they don't care if there's any cilantro or authentic spices, but they do like the way they cook the chicken, and it has an orangish color, like pad thai. What does this come from? Any suggestions on how to cook the chicken (I have boneless thighs) -- it's not cooked beforehand and shredded, it's definitely cooked after being chopped?
