Fried Cheese For Hamburgers

I used to be able to buy a Mexican style cheese called Andes or something like that. It hasn't been available for a long time and internet searches yieldeed no results.

This was an interesting cheese, used to fry it in the frying pan until melted, but retaing solid character and as atopping for a hamburger. It was soft and luscious.

Wonder if there is another cheese that might have such qualities???
