I'm looking for new ideas. No mushrooms, no seafood, no soups/stews
We normally have:
Pasta with garlic & olive oil
Bean & Cheese Quesadillas
Baked Potatoes (without the bacon)
Baked Cheese Ravioli w/Spinach & Marinara Sauce
I tried Roasted Butternut Squash Risotto, but (although) the squash was awesome out of the oven (plain), after I added it to the risotto, it tasted raw/undone/not finished? It was not a hit, but I so wanted it to be.
New ideas for this year:
Sweet Potato & Black Bean Taquitos or Enchiladas
I'm looking for things that are relatively quick & easy for a Friday night, low-cost, and things that we might want to have all year long.
Anything for the Crock-Pot would be all right, as well. I've thought about a potato casserole, but I'm still searching for one I like.
Pancakes and eggs without bacon or sausage would not go over well. I like tofu, but he does not. So, no vegetarian meat.
Any ideas? What do you do?
