I bought some precut fresh rice noodles last week in a Chinese market. When I got home, I put them in the fridge because I didn't plan to use them until the following day.
When it came time to use the noodles, they'd gotten too cold and too hard -- they were stubbornly stuck together and were only revived after being put in the microwave.
I thought since they were fresh they should have been refrigerated, though now that I think about it, they weren't kept cold in the store.
What should I have done, and does anyone have tips for how to deal with fresh rice noodles in the future? Should one unfold them and then refrigerate them?
