Fresh-pressed olive oil suggestions

I just came back from Italy with a liter of fresh-pressed unfiltered olive oil that I got from a farmer in Tuscany.

It has an intense olivey but slightly bitter taste with an incredibly strong peppery finish.

I tried sauteeing with it but it totally overwhelmed the saltimbocca I was making. Besides salads, any suggestions?
