Fresh Peach Pie per Sir Gawain request

Sir, here is the recipe you asked for. This is an old-fashioned recipe, but it is easy, fast and really makes use of very fresh fruit. You can use fresh blueberries, peaches, nectarines, blackberries and prob. other fruit, but I've only used the above.

Fresh Peach Pie
5 c. fresh peaches-peeled and sliced
1 c. water
1 c. sugar
4 T. cornstarch
1/4 tsp. salt
2 tsp. fresh lemon juice
1 tsp. lemon zest
1 (3oz.) pkg. cream cheese-at room temp.
3 tsp. sour cream
1/2 tsp. vanilla
1 pre-baked pie crust (best if deep dish)
Place 1 cup peaches (mash this cup) in a saucepan with 2/3c. water.Simmer for 5 min. Mix sugar, cornstarch and salt.Slowly add 1/3 c. water and mix until smooth. Combine with cooked peaches and boil until thick and transparent. Take off heat and add lemon zest and juice. Cool. Add remaining peaches.
Mix cream cheese, sour cream and vanilla together. Spread cheese mixture on bottom of the baked pie crust.
Add the fruit mixture and chill well.
Serve with a dollop of vanilla custard, lemon curd, homemade whipped cream or ice cream.

Of course as with all recipes, you can adjust the amount of fruit/sugar/spice depending on taste and fruit.I like a really full fruit pie, so sometimes I use more fruit-this depends on fruit and also on what I have on hand. It's a pretty flexable recipe--hope you enjoy!
