Fresh made Pastrami, and a great sausage maker!

I used to get fresh made pastrami from a Mexican Market in Lincoln Heights, but they changed butchers, and so ended the pastrami. Most deli’s have sides of smoked beef pastrami to slice up for you, but it’s not the same. One of the better brands is Boars Head.
In Gardina is an ancient German meat and sausage maker called Eschbach’s. The place is a lot bigger than Eruopean Sausage in Berverly Hills on Olympic, and it has parking (thank god) They also have a kind of German Black Forest pastrami that is on the darker side and not bad at all. They are just above the 405 FWY on Western at 18045 South.
(310-324-1376) But I am still looking for fresh made Amercan style pastrami. I grew up eating pastrami at the Original Hat in Alhambra, and Jonnies in Culver City is great, but I like my own recipes the best, and if I have to I will smoke some beef myself. It’s really not hard to do, just time consuming. Anybody know a place that makes it?
