I have a deposit on a goose from the green market in NYC. The farmer said to put the goose in a paper bag in the fridge for a week before we cook it so that it drains and drys out a bit. Is this true? Help! By this method, I have to pick up the goose Wednesday (tommorow) for cooking on Christmas. Does this make sense?
By the way - the only day the guy is at the market before Christmas IS Wednesday (tomorrow). Is he feeding me a line???
