I posted this down a ways as part of another thread, but figured I should bring it to the top.
Anyhow, I bought some fresh curry leaves the other day... now wondering the best way to use them. Do I use them whole, toward the beginning of a cook? I assume you don't chop the little fellows, like herbs, right?
Would they be used in any normal indian curry dish? I guess what I'm asking is how do I use them to their best use - showcasing their flavor, etc...
Last - I'm not sure I'm going to use all of these in the coming week or so. Do they freeze well? will they retain their freshness?
