My wife has been having a craving for fresh Asian noodles. She's Chinese (and an orthodox Jew as well), so she loves Chinese variants, but we also love ramen and other Japanese types, as well as rice noodles. The problem we have is a dearth of kosher-labeled fresh noodles in the Asian markets. I know that Westlake Noodle Co. in New York at least used to produce noodles under OU, and Azumaya makes some in the San Francisco area, but we live in Los Angeles now, and it's impossible to find either one here. Any suggestions? The ramen packs are a poor substitute for the real thing.
