Chantecleer used to be the best restaurant on the Island of Nantucket until the chef/owner Jean-Charles Burruet sold out. His current incarnation on Islamorada applies his customary standards and French technique to the finest and local ingredients. On our visit he had an uncommon local fish, hogfish, which was prepared to perfection either with browned butter and herbs or almondine. Both treatments were exquisite. Scallops provencale was true to the style with tomatoes and olives, without overwhelming the fish. The suggested glass of white burgundy was a perfect match. The chocolate souffle was heavenly. Service was welcoming, personable and informed. Our only regret was that the restaurant was closed the next evening.
