Freezing Sweet Potatoes

Where I live sweet potatoes are 18 cents a pound this week for Thanksgiving, down from nearly a dollar a pound, thus a very good time to get some in the freezer for future reference. Here is a quick, easy way to freeze them. Choose the biggest ones. Put them all in a big pot, cover with water, and boil until you can stick a fork or paring knife into them. Drain. Let them cool. The peelings will then slip off easily. Mash them with a can of crushed pineapple. They mash so easily that you don't need any special equipment---even a big spoon will do. Freeze in quantities suitable for your meal. You can then just zap this or if you are a marshmallow person you know what to do.
