Freezing/Roasting a Chicken

So my family looooves this recipe http://www.huffingtonpost.com/teri-tu... but of course it is way better after marinating a few days, which I usually only think of when i want it...and then have to go shop, marinate blah blah blah in order to wait for our favorite chicken in 2 days. So, I'm thinking if I mix it, throw it in a foodsaver bag and freeze it immediately I could then just pull it out of the freezer the day before cooking it instead of having to prepare...yeah? Or do we think it would get mushy from the lemon? Thanks!
