Freezing risotto

Hello all,

I've done a quick search & wasn't able to find an answer for my particular question (apologies if it's there & I didn't look hard enough). While I know that freezing risotto with the intention of eating it as risotto wouldn't work out well, what about freezing risotto with the intention of making pan-fried risotto cakes later? I typically make cakes with leftover risotto but I don't know that I'd be able to use it all up before it goes bad.
