Freezing Pancetta or Prosciutto

I find I often need an ounce or two to toiss in a dish to bring it to life and yet I don't usually have any sitting in my fridge. It occured to me that maybe I could pre-chop it and freeze it in 2 oz. portions. Any reason I shouldn't do this?
