Here's the situation:
- Bought about 2 lb of ground pork at the grocery store a few months ago. Used a bit of it, and then froze the rest in a large hunk.
- Two days ago, defrosted the hunk of ground meat on the counter initially, and then in the fridge. It stayed cold the entire time, and completely defrosted.
- Yesterday, used about 1/2 of the pork. Now we're left with about 3/4 lbs, which is in the fridge.
Is it okay to re-freeze the ground pork? If not, why? And if so, will the texture be noticeably affected?
