Freezing cooked food

I had dinner guests, I prepared way too much food (I sort of knew that I did) and have a lot of leftovers. I've never frozen left-over roasted veggies (cauliflower, broccoli, carrots and brussel sprouts). I'm wondering if freezing them will turn them mushy after defrosting. I also have waay too much mashed sweet potatoes, and haven't frozen those before but think they'll be OK (cuz they are mushy to begin with, duh).

Any thoughts on the veggies? I typically eat them cold/room temp, if that matters.
