Freezing cake

Mays Landing | Mar 7, 2003 01:08 AM

I'm in charge of desserts for a party on the 29th of this month. I'd like to start making some of them this week, and freeze them. I'm planning on a flourless chocolate cake, and since it's a more involved recipe (for me), this is one I wanted to make early. Instead of flour the cake has very fine chopped nuts.
By chance I learned that chopped nuts should not be, or could not be frozen. I'm wondering if this is true across the Does this mean nuts stored alone, or as part of something already baked ?
Also, how will freezing affect basic cakes, white, pound, angel etc.. if made from scratch.
I tried a few "other chowish sites" but being an amateur, I couldn't log on the forums that looked most helpful.
Thanks in advance. May
