Freezer worthy vegetable side dish for holidays

I need to get some cooking done now for the holidays. Unfortunately SIL has given me no indication of what to help with for the menu. She is not a planner, I am, and also have limited time in the next couple of days to cook. I figure I can do a couple side dishes and a dessert and they will work with whatever else she makes and hopefully take some load off of her.

I am making mini mac and cheese cups for an appetizer for Xmas Eve party, figure I would just make extra for a casserole for us.
Question #1: freeze before cooking or after? Leaning towards before, like I would with lasagna

Question #2: Can anyone think of a vegetable side dish that I could freeze ahead of time, preferably not too heavy! What about roasted beets? Can I roast them tomorrow and freeze after roasting? Any other thoughts?

Dessert: gingerbread cheesecake, should freeze no problem?
