When should I freeze?

Hi, I plan to buy a brisket flat at Costco... I plan to smoke it then sous vide it to finish.

I won't be able to eat it all before it goes bad... my question is, when should I freeze it? After the sous vide process? Smoke it then cut it in half and freeze one sous vide the other?
