free range chicken from the farm, never frozen

so how best to cook this bird, as simple as possible? no need for fancy flavors, i really want to taste the actual bird. but worried about toughness, dryness, over/undercooking...

this is a fresh kill from the amish farmer, not frozen, 4-5 lbs. picking up tomorrow...

who has experience with this kind of bird?
