I just found some old notes and realized that The Culinary Institute of America has free courses online. You just register and take the courses on a bunch of different topics, the offered courses change from time to time.
Right now there is a wine course and a course taught by Thomas Keller of the French Laundry on contemporary flavors with raisins. (Sounds interesting if you like raisins in your food, which I don't. After ten years spent practically living on GORP I never need to eat another raisin in my life)
