Due to Pssst's report on Let's Be Frank, when I found myself near the ballpark on a game day, I made a beeline to Acme to try the grassfed beef dog. As she described, they're griddled and served with fresh buns and grilled onions. I pointed to the patch of browning onions with the mix of carmelized and less cooked crunchier shreds for the combo of flavor and texture I wanted on my dog. The mustard was Nathan's Coney Island style, and organic ketchup is also available. I added a smear of relish too.
These are long and skinny dogs with a brownish hue since no nitrates or nitrites are used. It snaps back at you when you bite into it. The most astonishing thing is the taste. Really beefy, almost as meaty in flavor as hamburger, rather than tasting like hot dog spices. The texture is coarser than a regular dog, yet is plenty juicy though I think I'd like a little more fat for a more satisfying mouthfeel.
