A forgotten Classic!

A snowy night delight!

Hello friends!

Here is a delightful dish that is economical by making use of food items you may have laying around. It also becomes a gourmet delight when done right. Below are the directions for making a bacon tomato onion strata, definitely a snowy night delight!

Bacon Tomato Onion Strata

Half loaf of Italian Bread OR 8 slices of white or wheat (stale)
2 cups of shredded cheddar (replace with mozzarella or Swiss as desired)
2 cups heavy cream or half and half
6 extra large eggs
** 2 cups of filling (bacon, diced tomato, diced onion) TIP: supermarket salad bar is a great place for mix ingredients

Slice bread into ¼ thick slices and approximately 2 inch diameter
Grease 9x12 baking pan and layer pieces on bottom, overlapping the edges throughout.
Sprinkle ¾ cup of cheese over bread
Sprinkle filling choices over cheese
Sprinkle ¾ cup cheese over filling
Top filling and cheese with another layer of bread
Sprinkle ½ cup of cheese over bread
In separate bowl, mix heavy cream and eggs together
Pour mixture over Strata evenly
Bake at 350 for 45 minutes or until golden brown and set.
Slice serve and enjoy!

**Replace filling as desired with any vegetable or mix of vegetables, canned, fresh, frozen or almost ready to throw out. Any meat works as well, chicken, turkey, ham, pork sausage etc.

Note: Strata travels well, microwaves well and is great to take for lunch.
