I see that you said you were going to sign up for classes based on my positive experience (which I must say is a lot of pressure for me!).... a caveat, when choosing classes, the woman registering indicated who the good/recommended chefs/teachers were..... I'm signed up for the Mediterranean Cooking class on the 28th.... I was really impressed with the bread baking w/o recipes class. And although I had some experience (most in the class had never kneaded dough before), I gained a ton of knowledge. The instructor answered an email I sent her after class, and I just feel very confident. Confident enough to tackle an orange scented cranberry yeast bread with walnuts WITHOUT a recipe.
