Food tour in Paris? Is it worth it? Historical food tour?

So I've been on an incredible food tour in Florence where we went to the Old Food Market as well as balsamic tasting, wine tasting, gelato tasting. It was incredible and I've been on an equally cool food tour in New Orleans where we were able to go behind the scenes in some of the historical restaurants, etc. I was excited about a food tour in Paris, but it seems like they are all a cheese & wine tasting, some bread & charcuterie, maybe a crepe and some pastry. I feel like I could research the best baguette, the best crepe, the best patissierie and do this on my own. I was hoping for a tour where they introduce you to the different regional cuisines of France and/or take you behind the scenes at some of the oldest restaurants. Any thought or recommendations? thanks
