What are all of the food subcultures?

I'm very interested in trying out different meals in each food subculture for a month at a time. What do I mean? Well, when I say "food subculture" I'm referring to specific categories like "Vegan", "Vegetarian", "Gluten-free", "Health first" etc...

I like to try being a Vegan for a month, Vegetarian for a month, Gluten-free for a month, etc...

I've covered the above 4 subcategories so far, and I'm looking for others. What other subcategories are out there? They can be popular, they can be obscure, open to all.
