Food Safety - Frozen Meat

jjohio | Jul 11, 202005:16 PM     6

Disclaimer - ever since I had kids I've become a psycho about food safety because I don't want to give my kids food poisoning then be up with a sick child all night lol.

Alright so story. We got our hog butchered and went to do pick up. At pickup the meat was frozen. As we were sealing, adding to inventory, etc. my husband forgot a small can cooler that had meat in it. It then sat in the cooler in the back of our van for an additional 5 - 6 hours (keep in mind it was in our garage but it's still hot - like 88 here). The can cooler was full of the meats (boneless pork tenderloin, cubed ham steak, 3 pack pork chops, 2 fresh sides and a ham steak).

When he saw the cooler, he realized he forgot it and pulled the meat out. It was still cold. Took a temp of one of the pieces of meat and it was 28 F. We bagged it and threw it into the deep freezer.

We're should be good to go right? I'm just thinking the cooler was packed full so it would have been chilled in there. If anything I may discard the ham steak since that's a thin slice but the rest would have been larger pieces.

Would love opinions!
