It covered many New Orleans chefs and their recipes, including the chefs of Dooky Chase, Belle Forche, drinks at the Sazerac bar, La Penice, Rock n Bowl, Restaurant August, and Audrey George.
I have never been to any of them, but after watching Dooky Chase stir the hell out of bread pudding, Im sure Ill never go there. Give me plump morsels of bread, from stale cubes that are guaranteed to retain their body, suspended in a light pudding. (Ive even had cake, angel food cake, and croissants in place of bread.) But never in good faith can I encourage stirring the bread into mush, ever. Mais, jamais.
