Food Itinerary for Rome & Florence/Tuscany

Heading to Italy in a little less than 2 weeks and looking for some advice on meals. Looking to eat the classic dishes in both regions, and have read a bunch of great threads on Chowhound.

In Rome we are staying in Ponte. Any breakfast/cafe recommendations for those days?

Saturday- arrive late. Planning to do Emma for dinner.
Sunday- plan to do the Colosseum/Forum etc. Any lunch/dinner recommendations?
Monday- St. Peters, etc. Lunch recs? Have a reservation at Roscioli for Monday which looks like it gets mixed reviews on the board

Florence (5 days/5 nights):

Tuesday- Arrive at around 2PM. I know most places close for lunch around then.

Looking for dinner/lunch recs. Recommended to us so far:

Acqua al 2
Antico Noe
Il Lattini

Our days are pretty open in Florence. Looking into hiring a driver to do Siena, San Grimigano one day. Otherwise, open.

Any recs for Florence? Should we rent a car to leave Florence and head somewhere in Tuscany for a dinner?
