Using food coloring to enhance colors when pickling

It's peak watermelon season here in sunny South Texas. Truck farmers, roadside stands, farmers markets are brimming with this iconic summertime treat. My family LOVES WATERMELON! Fat ones, skinny ones, big ones, small ones, dark green, light green and long-fancy striped ones; yellow meat, orange meat and my favorite, juicy sweet,old fashioned dark red variety.

This year I want to take full advantage of this delicious, warm weather treat by canning pickled watermelon-rinds; stretching this summertime pleasure to a year 'round treat...especially during the holidays. Is it possible to use red, green, yellow food coloring on the translucent watermelon rind pickles without changing the natural clear color of the pickling syrup? If executed properly these brightly colored rinds would look like sparking jewels. A delicious way to dress up any holiday table. Thanks for your help.
