Focaccia made from Trader Joe's Pancake Mix

Went over to ChowPups for lunch yesterday and she made the most addictive focaccia from TJ's Pancake Mix. While there is a receipe on the side of the box for this, she did not use that but rather used the muffin and drop receipe receipe from the back of the box and added a few touches:

3 3/4 c. Trader Joes pancake mix
1 1/2 c. cold milk
1/4 c. olive oil
1/4 c. blue cheese (don't use too much)
1 clove garlic chopped very fine

Add mix and milk in a large bowl and stir to blend.
Add olive oil, blue cheese and garlic and mix well but don't beat. Cover with towel and let rest one hour. Take the dough out and kneed it and then cover again and let rest again for an hour.

Heat oven to 400 deg.

Place dough in 9 x13 pan sprinkling more olive oil on the top and poking the end of a wooden spoon into the dough to create the authentic focaccio appearance. Sprinkle top lightly with rosemary (ie not too much).
Bake at 400 deg. for 20-25 minutes or until the crust is brown.

This had such a different texture, almost corn bread like but with the tang of the blue cheese we were fighting for the last bit.

Since this was a receipe that she created as she went along, I took down the details while she could remember them - hope I didn't leave out anything vital! I plan to make it tonight.
