using different flours (soy, lentil, chickpea)

I'm eating too many refined foods (white flour, sugar, etc.) and not enough protein, so I'm trying to change my routine and eat a bit more healthfully. I am interested in the different higher protein and nutrient flours I find in health stores. I know that to make bread I would need to mix these sorts of flours with ordinary flour in order to get a recognizable loaf, so does anyone have any ideas/recipes for flatbreads, pie bases, handmade noodles that might work better?
