Flourless Peanut Butter Chocolate Chunk Cookie Success

Awhile back I saw a tempting recipe for Flourless Peanut Butter Chocolate Chunk Cookies in the e-mail newsletter from Recchiuti Chocolates. The author of recipe says "you'll really appreciate the flavor and consistency organic peanut butter gives these cookie." In a nutshell, you mix 8 oz. of organic, unsalted pb, with an egg, 3/4 c sugar, 1/4 tsp of kosher salt and 1/2 baking soda. Then you toss in 1/2 c. chopped unsalted peanuts and 6 oz of chocolate chunks. Form the cookies and place on a baking sheet lined with parchment paper. Bake for approx. 13 minutes at 350 til golden and puffy. Once they are out of the oven they a sprinkled with a little fleur de sel. In a word they were peanutty, very, very peanutty. DH was my tester and kept saying with every few bites "this is a good cookie". It is crunchy yet dense in texture. The saltiness is a nice contrast to the chocolate. These cookies may not be for the traditionalist who likes a chewy or crisp cookie, it is more for a pb lover. The only problem I encountered was that I baked them a tad too long and next time will try for a shorter amount of time. Other than that it was very easy to put together and the results were wonderful.
