I want to make Naan from a recipe in Flexitarian Table. It calls for unbleached AP flour (about 2 1/4 cups or so) and whole wheat bread flour (1 cup). I only have bleached AP and whole wheat flour (not for bread). Is it a big mistake to try to make this without the called-for flours? I gather from having just caught a brief blurb on ATK that bread flour has a higher protein content, making the dough more glutenous?
