My vanilla cake recipe calls for 1.5 cups of self-rising Flour and 1.25 cups of all-purpose flour. I have at home "bread flour" and "cake flour" Can i do an even exchange and substitute both? I'm a novice baker and I'm freaking out : ) I don't have time to go to store now as I have 3 little ones and it's for my husband's birthday. Any help would be appreciated. Thank you.
You can substitute all cake flour for the flour portion of the batter.
For the self-rising, you will need to add in some extra salt and baking powder. For the 1.5 cups called for, add 3/4 teaspoon salt and 2 1/4 teaspoons baking powder.
So that is, total: Substitute 2 3/4 cups cake flour, 3/4 teaspoon salt, and 2 1/4 teaspoons baking powder.
Joy of baking has charts which answer all these kind of questions. No need to freak out :)
