Flexibly scheduled (no reservation), mid-range dining options

I'm on a last-minute vacation in New York from Vancouver, staying till the end of the week. I've visited Manhattan many times before, mostly eating at mid-range places by reservation. This time, however, I'm travelling with someone where it's easier to keep plans flexible and eat based on the location we are exploring... so I'm looking for recommendations where walk-ins or last-minute reservations are possible. My travel companion also didn't pack anything but jeans, so places with dress codes are out, and probably out of price range anyhow. We are staying in downtown Brooklyn, and are happy to travel anywhere by subway.

Some things I'm looking for feedback around:

1. Mid-range (<$75pp, drinks excluded) pasta-focused Italian - was thinking of Lilia's, Del Posto prix fixe

2. Counter-service: Luke's Lobster, Katz's Deli, Joe's & John's pizza, Russ & Daughter's, Shake Shack :) - any other recommendations?

3. Are these places realistic for walk-in? Casa Mono, Ivan Ramen, Eataly, Noreetuh, Okonomi, Greenpoint Fish & Lobster, Sip Sak

4. Recommendations for craft breweries (or beer bars) we should visit? On my list so far are Greenpoint, Torst, Transmitter

Anything else you would recommend based on what I've listed above?
I use a google map to organize my eating interests. In case anyone's curious, I keep it here (though some points may be outdated based on previous trips):

Greenpoint Fish & Lobster Co.,
Eataly NYC Flatiron,
Ivan Ramen,
Casa Mono,
Shake Shack - Madison Square Park,
Luke's Lobster FiDi,
Del Posto,
