flexible tasting menus

i guess i'm so interested in tasting menus because at places in San Francisco like Gary Danko and La Folie, you can create your own tasting menus. Gary Danko presents you with a menu of appetizers, fish, meat, cheese and dessert course. You create your own meal. THe meal is priced by the number of courses you get. If you want a five coruse menu, and want all desserts, you can do it. I love the flexibility. At La Folie, You can either order a la carte, or order a four or five course menu for a set price. You're allowed to decide what makes up your meal. I love places like this and am trying to discover if chicago has any places like this. I know the Ritz-Carlton Dining room in san fran does this, does the one in chicago? i've only heard great things about chef stegner's cooking and would like to try it when i move to chicago in a month.
