'flavoring' pine nuts

Always around holiday time the spiced nuts mixture comes up. I'd like to make something similiar but instead of almonds or cashew, with pine nuts.

I'm concerned that the pine nuts are much too small to withstand the long roasting process that other nuts can take.

Any suggestion on toasting/roasting them and add flavor at the same time?

And if I can't do spicy, what other flavors should I try?
