Flavor solvents: Oil or alcohol.

A few spoonfuls of oil in a dish (particulary a dish using dried seasonings) brings out the flavor.

How can I use alcohol to do the same?

(This is not a wine or bourbon query. It's an ETOH ethanol query. Alcohol as a pure flavor solvent.)
