Hi- I want to grill up a flank steak this week, and am looking for a southwestern, mexican, latin american style marinade. When I have done flanks in the past, I usually do a great soy-garlic-ginger marinade, but I want to try something different. I guess a rub would work too, but I love the way wet marinades get into the steak, will dry rubs work the same. I was going to serve up with some warm tortillas, gucamole, beans and rice etc. Just need to get the flavor right on the steak. Should I try a carne asade style recipe? Any recs appreciated. Thanks
