My wife and I will be entertaining six of our closest friends for a pre-Christmas dinner and could use some feedback from the experts.
I am planning to serve a crown roast of lamb, complemented by a mushroom risotto and roasted Brussel sprouts.
One of our guests is a vegetarian - which I am beyond happy to accommodate. In the spirit of the sit-down dinner, I would like to prepare a fish dish for him that could stand up to the vegetarian prepared risotto and sprouts. My first thought was to serve him 3-5 seared scallops, but thought that some sort of white fish, plated whole might be nice. I have access to very good fish mongers.
Any suggestions would be greatly appreciated!
