A few years ago, i saw a documentary that showed that the common practice in American fisheries was to throw away fish roe. NOW, i am lacking in more helpful details. i THINK it was lake fish (are there lake sturgeon?)that were at issue, but then again, maybe it was alaskan salmon. I really love Russian salmon caviar and the three Irani varieties, beluga, osetra, sevruga. I know there are some small american caviar co's (yellow, from whitefish?)but wondered if there still exists a discarding practice in U.S. fisheries for many perfectly edible, and tasty, caviars....?
