fish cooking technique

There's a method for cooking fish where the fish is cooked in liquid. It's either brought to a simmer or brought to a boil, removed from the heat and left standing in the liquid. This method insures never over cooking the fish. Something to do with the heat transfer between the middle of the fish and the liquid. Does anyone know this technique? I don't remember the details - please help.
